I went ahead and tried baking these "peanut sun blossom" cookies using an Internet-informed egg substitute and they came out beautifully.

The substitute consists of one tablespoon (sorry; not an SI unit) flaxseed meal, and three tablespoons water, mixed up with a spoon in a coffee cup, and added to the mixture in the usual way.

Vegans won't be surprised, but I am delighted with the delicious outcome.

Won't forestall the larger environmental collapse but one does what one can.
