Although recipe types and names might be familiar, each subculture varies with ingredients, spices, rituals and methods.

I was reminded yesterday how much I like steamed tofu.

An awesome lunch with some "firm silken tofu*" that I had in the freezer, defrosted, steamed 10m, a sauce based on one in #Nourish and another one from #KylieKwong but adapted for what I had in the kitchen. It was so good and I have left-over sauce in the fridge.

Recipe: Thai Penang Curry / พะแนงหมู / Panang Moo

Yum. Tonight I made this for two with some free range Iberico Pork. And some coconut milk which was 99.5+% coconut (omg the kcals but 😋)

250g Pork Tenderloin
400ml Coconut Milk (use the best)
2 Tablespoons Panang Curry Paste (eg Mae Ploy or Maesri)
1 Tablespoon Brown Sugar
1 Tablespoon Fish Sauce (I used 2)
1 small bunch Pea Eggplant (I substituted 120g fine green beans)
1 Thai Long Chili (... a mild chili, or use a sweet pepper)
5 Kaffir lime leaves
20 Leaves of Thai or Sweet Basil
1 Tablespoon Vegetable Oil

Van gister, vandaag staat er niks spannends op 't menu: quiche met broccoli en blauwe kaas.
Werd onverwacht 'n heel avontuur, toen de plaatselijke AH vertelde dat glutenvrije bladerdeeg uit 't assortiment was gehaald.
De vriendin waar ik at, was vervolgens zo eigenwijs om 't hartige taartdeeg-recept dat ik opsnorde, volledig aan te passen, waardoor 't niet echt wilde meewerken. Maar na 2x 'blind' bakken, uiteindelijk toch nog 'n redelijk geslaagd resultaat!
